Baking 48 cupcakes for a party without losing a weekend
A two-day plan: bake and freeze on Saturday, colour and pipe on Sunday morning, transport without smudging.

Day one: bake and freeze
Our base recipe makes 12, and it quadruples cleanly. Mix in two batches rather than one enormous bowl — a home mixer cannot aerate four batches of butter evenly.
Bake one tin at a time on the middle shelf. Cool completely, then freeze unfrosted in a sealed box. Frozen cupcakes are actually moister after thawing than day-old ones left out.
Day two: colour and pipe
Make one large batch of buttercream and split it into three bowls, then colour green, purple and pink. Sixteen of each gives you a full table with no leftovers.
Thaw the cupcakes at room temperature for an hour before frosting. Piping onto a fridge-cold cupcake makes condensation, and condensation makes cases peel.
Getting them there intact
Use boxes with cupcake inserts, or cut cross shapes into a sheet of card and sit each case in one. Flat boot, not the back seat.
Bring a small container of spare buttercream and a piping bag. Two swirls always need a repair, and a thirty-second fix on arrival looks better than an apology.
